One quick question, when you delete a category are the galleries in that category also removed?

yes, they are deleted. same applies to sponsors
if you want you can use the mass change controls on the bottom of the galleries list, so that you move the galleries to different sponsor/category before deleting the category.. that way the gals won't be deleted since they are already in other category

yes, you can do that. just take in mind when you delete feeds, their feed files will be removed, but the directory with the thumbs used in the posts, won't be touched, so your posts that are already published will remain working..
